Apple Cinnamon Streusel Muffins



Craving a sweet treat or just a muffin in general? Perhaps you have some leftover apples? Maybe you're just feeling cinnamony. Well, then this is the recipe for you! These apple cinnamon streusel muffins are decadent and delicious! A healthier take on a classic by subsituting traditional ingredients with healthier, yet equally tasty, alternatives like greek yogurt and honey.


Apple cinnamon streusel muffins

Makes 6-8 muffins


Muffin ingredients:

A cupcake/muffin tray (size of your choice).

Muffin liners.

Wet ingredients:

¼ cup vanilla greek yogurt 

5 tablespoons unsalted butter 

2 tablespoon honey + 2 teaspoons

2 tablespoons milk

1 & 1/2 tablespoons bourbon vanilla paste 

¼ teaspoon rum extract

One egg


Dry ingredients:

1 & 1/8 cup of all purpose flour p

1 teaspoon baking powder 

¼ teaspoon nutmeg

1 teaspoon cinnamon

¼ teaspoon salt


Apple center:

One peeled & diced granny smith apple 

⅛ lemon juice

2 teaspoons cinnamon


Cinnamon streusel topping:

4 tablespoons butter (½ stick) room temperature sliced

⅝ cup of flour (½ + ⅛)

1 & 1/2 teaspoon cinnamon

1/2 cup packed coconut sugar 



Instructions:

  1. Preheat oven to 350F on bake

  2. Peel and slice one granny smith apple (or apple of your choice). Add in lemon juice, mix. Then, add cinnamon and stir. Set aside.

  3. Melt butter to liquid and allow to cool. 

  4. Mix in a stand mix the cooled melted butter and egg for a minute on medium. Add vanilla extract, rum extract, greek yogurt, milk, and honey and mix. 

  5. In a separate bowl combine & mix dry ingredients. 

  6. Once fully mixed, slowly add in dry ingredients into the wet ingredients bowl until fully combined. Set aside muffin mixture. 

  7. For streusel topping; slice butter into small cubed butter pieces. Combine flour, sugar, and cinnamon. Then, add in sliced butter and use a fork to smash it. At first it will be hard to combine but after smashing for 2-5 minutes it should become crumbly. If it does not combine and is too dry add more butter, if it becomes too wet (it forms a ball and is not crumbly) add more flour.

  8. Time to assemble! First, fill your muffin tray with muffin liners.

  9. Then fill between ¼-½ of your muffin liner with the muffin mixture. Then add in a little bit (around a ¼ teaspoons-½ teaspoon) of the cinnamon topping. Add in some apple mixture (5-8 diced apple cubes). Follow with more streusel topping (same as before). Now, fill the rest of your muffin liner with the muffin mixture. Finally add your desired amount of streusel on top (I to around 1 tablespoon). Keep in mind a good portion of the streusel will melt while baking.

  10. Once you are out of muffin mixture and all of your muffin liners are filled, bake muffins at 350 F for 18-22 minutes, and remove any extra muffin liners that do not get filled. To test to see if they are done, use a toothpick, if it comes out clean they are done, if with batter, bake for longer. Allow to cool before enjoying
